Faktorer for økt tilgjengelighet av fisk og sjømat i ungdomsskolen

Sammendrag
Hensikt og problemstilling: Studier viser at barn unge har et for lavt inntak av fisk- og
sjømat sammenlignet med myndighetenes anbefalinger. Med bakgrunn i at grunnlaget for god
helse og helsevaner legges tidlig og skolen som arena møter mange barn og unge, er skolen
sentral i utviklingen av barn og unges kosthold der de kan utøve egne matvalg. Flere studier
lignende Sjømatprosjektet har forsøkt å øke tilgjengeligheten av fisk og sjømat i skolen for å
øke inntaket av matvaregruppen. Denne oppgaven ønsker å undersøke: Hvilke faktorer kan ha
betydning for å øke tilgjengeligheten av fisk og sjømat gjennom Sjømatprosjektets
ungdomsskoler, og som igjen kan ha betydning for fremtidig implementering av lignende
prosjekt?
Metode: Utvalget og datamateriale ble hentet fra tre ungdomsskoler i Sjømatprosjektet.
Utvalget bestod av tre prosjektledere, en mat- og helselærer og 25 ungdomsskoleelever og
datamaterialet bestod av tre kvalitative individuelle intervju, seks fokusgruppeintervju og 20
observasjonsjoner. Datamaterialet ble innsamlet før-, underveis- og etter
intervensjonsperiodene i prosjektet. Det ble gjennomført en induktiv analyse gjennom In vivo
koding og ordsøk etter ord med positiv og negativ omtale av sjømatproduktene.
Resultater: Funnene viste at sjømatproduktene ble ulikt mottatt av elevene, prosjektlederne
og mat- og helselæreren. Sushi, Cold Cat, wrap og bagett ble best mottatt med bakgrunn i
flest positive omtaler, pris, kvalitet, produksjonsmetode eller elevenes engasjement under
utdelingen. Panering av fisk ble godt mottatt av elevene. Skole A og C hadde de største
utfordringer knyttet til fasiliteter og strukturer i kantinen, med bakgrunn i at
kantinefasilitetene ikke var tilrettelagt for produksjon og servering av mat og kantinedriften
hadde liten prioritet på skolene. Skole B hadde ingen utfordringer med fasiliteter og
strukturer, men måtte ta økonomi i betraktning i kantinedriften som hadde høy prioritet på
skolen. Alle skolene opplevde utfordringer med matvareleverandørene. Skole A og C hadde
størst utfordringer med ledelsens og lærernes tilhørighet til prosjektet, mens ledelsen på skole
B uttrykte støtte til kantinearbeidet under prosjektet.
Konklusjon: Sjømatprosjektet som kostholdintervensjon bidro til å øke tilgjengeligheten av
fisk og sjømat i skolen, ettersom alle skolene tilbød en faktor som sjømatprodukter i kantinen,
som kunne bli en del av elevenes matvalg. Funnene viste samtidig at tre fysiske faktorer
knyttet til mat og en faktor som ansatte i skolen sin tilhørighet til prosjektet, kunne ha
ytterligere betydning for økt tilgjengelighet av matvaregruppen i skolen. Purpose and research question: Studies show that children and adolescents have a lower
fish- and seafood consumption compared to the government recommendations. Due to the
fact that the foundation for good health and related habits is established early in life, and
because school is an arena for all children and adolescents, the school is central to the
development of their diet and own food choices. Several studies similar to Sjømatprosjektet
(translated: Seafood project) have sought to increase the availability of fish and seafood in
schools to increase the intake of this food group. This assignment wants to investigate: What
factors can be important for increasing the availability of fish and seafood throughout the
school of secondary education in the Seafood project, and which in turn can affect future
implementation of similar projects?
Method: Informants and data were collected from three lower secondary schools in the
Seafood project. The informants were three project managers, one food and health teacher and
25 adolescents. The data consisted of three qualitative individual interviews, six focus group
interviews and 20 observations. The data was collected before, during and after the
intervention periods of the project. An inductive analysis was carried out through In vivo
coding and a word search for words with positive and negative mention of seafood products.
Results: Findings showed that the seafood products were unequally received by the
informants. Sushi, Cold Cat, wrap and bagett were best received based on positive reviews,
price, quality, production method or student engagement. Paned fish was well received by the
students. School A and C had the biggest challenges related to facilities and structure in the
canteen, due to the fact that the canteen facilities were not adapted for the production and
serving of food, and that canteen operations generally have a low priority at these schools.
School B had no challenges, but had to take their economy into account, which had high
priority at the school. All schools experienced challenges with the food suppliers. School A
and C had the biggest staff related challenges based on commiting to the project, whilst the
management at school B expressed support for the project related work in the canteen.
Conclusion: The Seafood project as dietary intervention helped to increase the availability of
fish and seafood in schools, since the schools offered seafood products through the canteen.
The products could become a part of the students’ food choices. The findings also showed
that three physical factors related to food and one factor such as staff commitment to the
project, could have further significance for increased availability of the food group in schools.
